Method
- Heat the oil over medium heat. Cook the onions and bell pepper for 8 minutes. Add the garlic for 30 seconds.
- Stir in the thyme, allspice and paprika.
- Add the sweet potatoes, tomatoes, coconut milk and stock. Simmer partly covered for 20 minutes.
- Add the kidney beans and cook for 10 to 12 minutes, until the sweet potatoes are tender.
- Stir in the spinach until wilted. Add lime juice and optional hot pepper.
- Taste and season. Rest for 5 minutes before serving.

Useful notes
Use fully cooked canned or home-cooked kidney beans; raw or undercooked kidney beans are unsafe.
