Why this recipe works: Red lentils break down naturally, making a thick, spoonable stew without flour. The onions are cooked slowly to form the flavour base.

Method

  1. Heat the oil in a heavy pot over medium-low heat. Cook the onions with a pinch of salt for 15 minutes, stirring often, until very soft and lightly golden.
  2. Add the garlic and ginger and cook for 1 minute. Stir in the paprika, cumin, coriander, turmeric and optional cayenne for 20 seconds.
  3. Add the tomato paste and cook for 1 minute. Stir in the lentils and stock.
  4. Bring to a simmer, then lower the heat. Cook partly covered for 25 to 30 minutes, stirring every few minutes as the lentils thicken.
  5. Add more water if needed to keep the texture spoonable rather than stiff.
  6. Stir in the lemon juice, season and rest for 5 minutes before serving.

Cultural note

Misir wot is an Ethiopian red lentil dish with many household variations. This milder adaptation uses a simplified spice blend and does not claim to reproduce a specific family or regional recipe.
